Birthday Tings This Weekend!
Greetings and Happy Birthday weekend to me! As always, birthdays are an amazing time of reflection and an opportunity to carve out new pathways for elevation, opportunities and improvement. I can't believe that I am turning 52! I don't feel it at all....Well maybe just a little.
I just wanted to say thank you to all of you that take the time to read this newsletter weekly. I pray that we provide something of value to you. Whether it be a health and wellness nugget, a recipe that you can try to make your life better or I am telling you about an upcoming event that you can participate in.

This Sunday is my Birthday 10/26!!! Since we will be at Oyun Botanical Gardens, on Saturday, we have decided to do a Customer Appreciation, Meet and Greet from 1-5pm EST. This is an opportunity to come by the Garden, say hello to me, give me a hug for my birthday, shop are goodies, get some bites and celebrate my 52nd birthday with me! We will be offering Henna tattoos (you have to reserve your spot for that) and just experience some garden good vibes. There are 6 SPOTS LEFT for the henna tattoos. BEWELL RECIPE: AFRICAN PEANUT STEW WITH OKRA GREENS
One of the benefits in vending at Oyun Botanical Gardens weekly is that I get access to really fresh produce that are unique and different that you won't find everywhere. I am still on my no eating out journey this month. This past week, I got some okra greens and thought that it would be fun to make an African Peanut Stew with it. It turned out really good and the family seemed to love it. Here is the recipe for you to try! Here is a video of me talking about the Okra Greens on TikTok.
Ingredients For the Stew:
- 1 tbsp olive oil oil
- 1 large onion, diced
- 2-inch piece fresh ginger, grated
- 2 cups okra, sliced
- 1 cup okra greens, chopped
- 2 cups of chickpeas, drained and rinsed
- 1 cup spaghetti sauce (tomato-based)
- 1/2 cup creamy peanut butter
- 2 cups of coconut milk
- 1/4 tsp cayenne pepper (adjust to taste)
- Salt and black pepper, to taste
- 1 cup vegetable broth or water (optional, for adjusting consistency)
For the Couscous:
- 1 cup couscous
- 1 cup boiling water or vegetable broth
- Salt, to taste
- 1 tbsp olive oil or vegan butter (optional)
Instructions:
- Prepare the Stew Base: Heat the olive oil in a large pot over medium heat. Add the diced onions and sauté for 4–5 minutes until translucent. Add the grated ginger and cook for another 1–2 minutes until fragrant.
- Add Vegetables and Chickpeas: Stir in the sliced okra, chopped okra greens, and chickpeas. Cook for 5 minutes, stirring occasionally.
- Add Sauce and Peanut Butter: Pour in the spaghetti sauce and coconut milk, stirring to combine. Add the peanut butter and cayenne pepper, stirring well until the peanut butter fully incorporates and the stew is creamy.
- Simmer: Reduce heat to low and simmer the stew for 20–25 minutes, stirring occasionally. If the stew is too thick, add vegetable broth or water a little at a time until you reach your preferred consistency.
- Season: Add salt and black pepper to taste. Adjust cayenne pepper for desired heat level.
- Prepare Couscous: While the stew simmers, place couscous in a heatproof bowl. Pour boiling water or broth over it, add a pinch of salt and olive oil or vegan butter if using. Cover tightly and let it sit for 5 minutes. Fluff with a fork before serving.
- Serve: Serve the African Peanut Stew hot, ladled over or alongside the fluffy couscous.
Enjoy this creamy, warming stew with the perfect balance of peanut richness, spice, and wholesome veggies! Perfect for the cooler weather this time of year.
