Ready to finish the year strong? Our final Address Your Thirst First Hydration Challenge of 2025 is just around the corner, and we want YOU to join us November 1st through the 21st!

LET'S MAKE IT FOR THE SECOND ROUND

Round Two Recipe: Leftover Rice & Roasted Cauliflower Bowl with Vegan Sausage & Cucumber Salad

One of my favorite ways to get the most out of meal prep is to reinvent leftovers into a fresh, delicious second-round dish. This week, I transformed some roasted cauliflower, cucumber salad (tossed with black sesame seeds and a pinch of salt), vegan sausage, and leftover rice into a satisfying bowl for the family — topped with a slice of creamy avocado for an added boost of flavor and nutrition.

Here’s how you can make this easy, wholesome bowl too!

Ingredients:

  • 1 cup leftover cooked rice
  • 1 cup roasted cauliflower florets
  • 1/2 cup cucumber salad (cucumber slices, black sesame seeds, pinch of salt)
  • 1 vegan sausage (pan seared and sliced)
  • 1/2 avocado, sliced

Directions:

  • Reheat the rice in a pan on the stove until warm.
  • Warm the vegan sausage slices as desired (pan-fry, oven, or microwave).
  • In a bowl, combine the warmed rice and roasted cauliflower.
  • Top with the vegan sausage slices and a generous scoop of cucumber salad.
  • Finish with sliced avocado on top for creaminess.

Enjoy this quick, nourishing bowl that turns your meal prep leftovers into a fresh and exciting meal all over again!
