BEWELL RECIPE:
WHO SAID FROZEN

🥬 Ingredients

  • 1 bag Frozen Fried Rice (any variety you like)
  • A few Turmeric Leaves, sliced or torn
  • ½ Red Onion, thinly sliced
  • ½ block Soy-Free Tofu, cubed
  • A handful of Thai Basil Leaves
  • ½ teaspoon Chinese Five Spice
  • A few spoonfuls of Kimchi, for serving or mixing in
  • Optional: Avocado oil or Sesame oil for cooking

🔥 Instructions

  1. Prepare your tofu:
Pat tofu dry and cube it into bite-sized pieces. Heat a bit of avocado or sesame oil in a skillet and pan-sear until golden and crisp on all sides. Remove and set aside.
  2. Sauté aromatics:
In the same skillet, add red onions and sauté until translucent and fragrant. Toss in the turmeric leaves and let them release their earthy aroma.
  3. Add the rice:
Pour in your frozen fried rice (no need to thaw) and stir well. Cook for 4–5 minutes until heated through.
  4. Season and spice:
Sprinkle in the Chinese Five Spice and stir to coat evenly. Add back the tofu and toss everything together until the flavors meld beautifully.
  5. Finish with freshness:
Turn off the heat and fold in Thai basil leaves so they gently wilt. Serve hot, topped with a scoop of kimchi for a tangy, probiotic kick.

Have an amazing weekend!

COZY RECIPE INSIDE MASHED TURNIPS AND THE GREENS TOPPED WITH COCONUT BACON I found some amazing Turnips at the FRESH MARKET at Oyun Botanical Gardens this past week and wasn't quite sure what to do with them. After chatting with someone about all of the things that you can do with turnips, I decided to make these gorgeous mashed turnips and topped them with some of its greens and coconut bacon. This dish was inspired by the resident horticulture therapist at Oyun and Ras Kofi, The Farmer....

DO HARD THINGS THIS YEAR This year, I’ve committed to doing hard things. One goal I’m focused on is completing 2–5 unassisted chin-ups/pull-ups. Amid all the chaos around us, setting small, achievable goals has helped me zero in on what I can control. I work on this daily, doing as many chin-ups as I can throughout the day. Having the pull-up bar right by my bathroom entrance keeps me consistent and disciplined. Over time, I’ve noticed I’m getting stronger and more confident and I can do more...
