Still Not Eating Out - Some Lessons Learned


STILL NOT EATING OUT - SOME LESSONS LEARNED + EASY RECIPE INSIDE!

As you know, I haven’t eaten out this month—instead, I’ve been cooking for my family. Surprisingly, I don’t miss grabbing bites from my favorite eateries at all. In fact, I’m really enjoying eating at home.

Here’s what I’ve learned so far:

  1. Cooking is my happy place. Finding joy in what you do matters!
  2. Despite my busy schedule, my strong desire to provide healthy meals for my family makes it feel rewarding, not like a chore. Purpose is everything. I've even been thinking about healthier options for the holidays. I created this Butternut Squash Mac and Cheez recipe that I think you are going to love. Check it out at the end of this newsletter.
  3. Creating meals lets me express creativity by experimenting with new ingredients and techniques. Find what brings out your creative edge!
  4. Since we all decided to eat at home, my sons have developed a new appreciation for the food we make. My little one even helps plan menus and prep meals — including children builds buy-in.
  5. Slowing down has helped me focus on health habits like drinking water and taking vitamins, without distractions. Any new habit needs discipline and focus.

BEWELL RECIPE:
BUTTERNUT SQUASH
MAC AND CHEEZ!

Here’s my healthier take on a comfort classic — creamy, cozy, and full of flavor…trust....it's soooo damn good! CHECK OUT HOW I PUT IT TOGETHER.

What You’ll Need:

  • 1 Cup butternut squash (peeled + cubed)
  • 1 Large carrot (peeled + chopped)
  • ½ Small onion (diced)
  • 1 Cup coconut milk (or other plant-based milk)
  • 1 Box macaroni pasta (gluten-free or whole grain if you like!)
  • ¼ Cup nutritional yeast
  • 1 Tsp salt (adjust to taste)
  • ½ Tsp smoked paprika
  • Vegan cheez (optional)

Directions:

  1. Cook your veggies. In a medium pot, add the butternut squash, carrots, and onions. Cover with water and simmer until everything is fork-tender (about 10–12 minutes).
  2. Blend it up! Drain the veggies and add them to a blender with coconut milk, nutritional yeast, salt, and smoked paprika. Blend until smooth and creamy.
  3. Make your Pasta. Cook the macaroni according to package directions. Drain and set aside.
  4. Combine + Serve. Pour your creamy cheez sauce over the warm pasta, stirring until it’s coated in golden goodness.
  5. Lastly: Top with vegan cheez and bake for 10 minutes to get that melty finish.
