MASHED TURNIPS AND THE GREENS TOPPED WITH COCONUT BACON

I found some amazing Turnips at the FRESH MARKET at Oyun Botanical Gardens this past week and wasn't quite sure what to do with them. After chatting with someone about all of the things that you can do with turnips, I decided to make these gorgeous mashed turnips and topped them with some of its greens and coconut bacon.

This dish was inspired by the resident horticulture therapist at Oyun and Ras Kofi, The Farmer. They both reminded me that turnips are a wonderful substitute for mash potatoes and perfect for this time of year. I paired the turnips with fried oyster mushrooms and I am telling you it was divine.

Mashed Turnips with Turnip Greens Topped with Coconut Bacon

Ingredients:

  • 3-4 medium turnips, peeled and chopped
  • 1/4 cup almond milk (unsweetened)
  • 2 tbsp nutritional yeast
  • Salt, to taste
  • Turnip greens (washed and chopped)
  • Coconut bacon (store-bought or homemade), for topping
  • Coconut aminos, for drizzling

Instructions:

Cook the Turnips:

Boil the peeled and chopped turnips in salted water until tender, about 15-20 minutes. Drain well.

Mash the Turnips:

In a bowl, mash the cooked turnips with almond milk, nutritional yeast, and salt until creamy and smooth. Adjust salt and almond milk to your desired consistency.

Sauté the Greens:

In a small pan, sauté the turnip greens with a pinch of salt until wilted but still vibrant green, about 3-4 minutes.

Assemble & Serve:

Scoop the mashed turnips onto a plate or bowl. Top with sautéed turnip greens and sprinkle with coconut bacon. Drizzle a little coconut aminos over the top for a flavorful finish.
