WHEN REST CALLS...JUST REST
Hey Y'all,
You’re getting this message a bit late this evening — It’s been one hell of a day and week! With kids back in school and everything going on, I needed to take a much-needed pause to rest and recharge.
Because of that, I’ve decided to cancel my farmers market appearances this weekend to focus on preparing for the juicing class, Vitality Through Juicing, happening on Saturday at the Healing Me First Wellness Center...and to just take a breather.
I want to encourage and remind you all to listen to your body deeply and rest when you need it. If you feel called to take a break, don’t hesitate, just take that break — everything will still be there when you’re ready to return.

BEEE WELL RECIPE:
Cauliflower "Rice" Stir-Fry
A lighter, plant-forward swap for classic fried rice — full of flavor, fiber, and nourishment.
Ingredients (4 servings):
- 1 medium head of cauliflower, chopped fine or pulsed (or 4 cups store-bought cauliflower rice)
- 1 Tbsp sesame oil (or avocado oil)
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 1 cup carrots, diced small
- 1 cup bell pepper, diced
- 1 cup frozen peas (or edamame)
- 2 green onions, sliced
- 2 Tbsp low-sodium tamari or coconut aminos
- 1 Tbsp rice vinegar or lime juice
- 1 tsp fresh ginger, grated
- Optional: scrambled tofu, chickpeas, or tempeh for protein
- Sesame seeds + fresh cilantro for garnish
Instructions:
- If starting with whole cauliflower, chop into florets or pulse in a food processor until it resembles rice (don’t over-process).
- Heat sesame oil in a large skillet or wok over medium heat. Add onion, garlic, and ginger, and sauté until fragrant (about 2 minutes).
- Add carrots and bell pepper, cooking until slightly softened. Stir in peas (or edamame).
- Add cauliflower rice, tamari, and rice vinegar. Stir-fry for 5–7 minutes until cauliflower is tender but not mushy.
- Fold in green onions and optional protein. Taste and adjust seasoning.
- Garnish with sesame seeds and cilantro before serving.
