October is here, and I’m inviting you to join me on a fun and nourishing journey — a whole month of not eating out!

Some of you may have goals of saving money, eating healthier, or simply taking the time to enjoy homemade meals. Well my friend, cooking at home has so many benefits. It’s also a wonderful way to connect with your food and yourself.

Trust me I know, sometimes cooking can feel overwhelming, so I’ll be sharing simple, quick, and delicious recipes with you throughout the month to keep things easy and enjoyable.

To kick things off, try this quick and tasty Beee's Supreme Veggie Pizza that I made. Trust me, my family can't get enough of it. The recipe is at the end of this newsletter. It’s packed with fresh veggies, hearty vegan sausage, and full of flavor — Perfect for a satisfying dinner in less than 30 minutes.

One more week for this October Meal Prep Menu. Just imagine warm curry spices, along with veggies like cauliflower, carrots and peas all stewed together with coconut milk. We got the comfort foods for the cooler season! Our curry dish is simply delightful. Watch me make this delicious Tikka Masala.

BEWELL RECIPE:
Quick & Easy Beee's Supreme Veggie Pizza on Garlic Naan

Here's a simple, delicious quick pizza recipe that is affordable, with ingredients that are easy to find.

Ingredients:

  • 1 garlic naan (Trader Joe’s brand works great!)
  • 1/2 cup vegan sausage, (I used Field Roast, sliced or crumbled)
  • 1/4 cup of plant-based Vegan Cheez (Mozzarella or Cheddar)
  • 1/2 cup broccoli florets, chopped
  • 1 cup fresh spinach (from Oyun Botanical Garden or store-bought)
  • 1/2 cup marinara sauce (your favorite simple marinara)
  • Olive oil (for sautéing)

Instructions:
1. Preheat oven to 375°F (190°C).
Sauté the veggies and sausage:

  • In a pan over medium heat, add a drizzle of olive oil. Toss in the vegan sausage and cook for 3-4 minutes until browned. Add the broccoli and spinach and sauté for another 3 minutes until tender and spinach is wilted. Remove from heat.

2. Assemble the pizza

  • Place the garlic naan on a baking sheet. Spread marinara sauce evenly over the naan. Top with the sautéed sausage and veggies.

3. Bake the pizza:

  • Bake in the preheated oven for 8-10 minutes or until the naan is crispy and toppings are heated through.

Serve and enjoy!

  • Slice up your quick garden veggie pizza and enjoy a flavorful, nourishing meal in minutes.
